Nutrient Dense Cookies

I've been making these cookies for months now. I keep them in my freezer so we always have a snack that's healthy. I usually triple the recipe. These cookies are SO GOOD! And it only takes 1-2 cookies to satisfy because they're full of nutrients.



Did you know your brain knows when your body receives the nutrients it needs to thrive? Leptin hormones signal to your digestive system a feeling of satisfaction when proper nutrients are consumed.



I find it odd that leptin is made up of 167 amino acids. We know grain is very high in amino acids and they've only named a few of those amino acids that are in grain. Is it any wonder when we consume whole grains our appetites are satisfied and we eat less?


“Why do you spend money for that which is not bread,

And your earnings for what does not satisfy?" Isaiah 55:2 tells us not to spend money on something that is not bread (dead, rancid, chemical laden bread in the store is NOT REAL BREAD). It will make you sick. It is so amazing to me that science is proving the VERY truth that was told to mankind thousands of years ago! No matter how hard the devil works to hide this Biblical truth and demonize bread, it will come out and the Lord will lead His people back to healing if we listen to His Word.


On to this amazing recipe from Grains in Small Places. She has some really good recipes on her blog for fresh milled, she is definitely one to follow. I've adapted the sugar and I am very picky about what kind of chocolate chips I use. Currently it's only EnjoyLife chocolate chips. Be careful that you don't buy the Nestle knockoff because they copied the packaging colors!


Kara's original recipe is here and she explains somewhere on her blog why you would use einkorn as the grain in a cookie recipe (basically it mills finer). The main thing I changed was the sugar to sucanat. My experience has been that sucanat when mixed with fresh milled lends a sweeter flavor than refined sugars lend. And it's DEFINITELY much healthier since it is not bleached and only heated on low and hand paddled to create sugar crystals. It dissolves easily in the recipes I've used it in.





INGREDIENTS:

1 cup of butter (225g)

2 and 2/3 cup Fresh Milled Einkorn Flour (365g) Mill 365g of einkorn berries to get the flour

1 tsp baking powder

1 tsp baking soda

1 tsp sea salt

2 cups sucanat (420g)

2 eggs

1 tsp Vanilla (Kara's vanilla recipe HERE)

1 bag Semi Sweet Chocolate Chips - EnjoyLife (340g)


INSTRUCTIONS:

  1. Brown the butter in a saucepan and let it cool to 110°

  2. Mill 365 grams einkorn berries for the flour

  3. Add baking powder, baking soda and salt to the flour

  4. Once the butter has cooled slightly, put it in the mixer with the sucanat, and beat to combine for about 2 minutes

  5. Next, add eggs one at a time and beat for about 3 minutes on medium high

  6. Add the vanilla and beat for 2 more minutes until fully combined

  7. Slowly add your flour mixture on low until everything is all incorporated

  8. Lastly, add the chocolate chips, and mix in gently

  9. Let the dough rest in the refrigerator

  10. Shape and flash freeze for 1 hour

  11. Package your frozen, shaped cookies

  12. Preheat oven to 350°F and bake from frozen for about 10 minutes (I prefer to take them out before completely browned when they're still slightly puffy and let them finish baking outside the oven)
